Rattlesnake biting themselves?

Co-workers of my husband have killed three rattlesnakes in New Mexico and all three rattlesnakes have bitten themselves. What is the reason they do this? The men even fried the snakes and ate them is that safe? I would not think it was safe to eat the meat but they say it is safe!!!
